Question – is being broke an integral and unavoidable part of university life? I happen to think so. During the summer, work is slow so I don’t get as many shifts which kinda sucks because I go out and spend so much more than I usually do. So as you can probably see, my bank account ends up slowly dwindling down to a penny and some dust and my pantry ends up empty and tragic looking.
And that brings us to these almond macaroons. I always bake whenever I feel terrible, which is strange because I’m a terrible baker. Perhaps that’s why I always end up coming up with fail proof ideas like these guys. I basically dove into the back of many cupboards to come up with these ingredients and mixed it all together to make something packed with protein and healthy fats.
Ingredients:
- 2 cups of shredded, unsweetened coconut
- 1-2 tablespoons of vanilla honey (to taste)
- pinch of salt
- 1.5 teaspoons of dried ginger
- 3 tablespoons of almond butter
- 1 egg
- almonds to top
Directions:
Mix everything together and shape into little balls, and press an almond into each little mound. Bake at 350F for about 15-20 minutes until everything is nice and golden!
